I know Hokeycat will consider some of these a little conventional as well, but they have been good page turners for me.
David Gemmell's early stuff - "Druss the Legend" etc. Good heroic fantasy where if the good guys win it is always at a cost
George R R Martins - "A Song of Ice and Fire". Shaping up nicely into a story of a fantasy world where evil is about to be let lose because "the great and the good" are spending all their time politicking... Not finished yet though
Glen Cook - "The Black Company". Not every-ones cup of tea but I find them a nice romp. The lives of a very successful group of mundane mercs in a high fantasy world.
Guy Gavriel Kay - "The Fionavar Tapestry" A good take on the innocents from the real world getting involved in a fantastic world story. Some real heroic sacrifice
Ricardo Pinto - "The Stone Dance of the Cameleon". The most uncoventional of this list. A very different fantasy world full of fantastic ideas. Sadly also an on-going work.
Greg Keyes - "The Waterborn" & "The Blackgod". A nice fantasy where the gods are not humanistic - ever wondered what it would be like to make an enemy of a river?
Oh, and the Thieves World series.
